French Toast (Serves 3)

Ingredients

  • 6-8 slices bread (brioche, challah, or thick-cut white bread work best)
  • 3 large eggs
  • 3/4 cup milk
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • Pinch of salt
  • Butter for cooking
  • Maple syrup (for serving)
  • Powdered sugar (optional, for serving)

Instructions

  1. In a shallow bowl, whisk together eggs, milk, vanilla, cinnamon, and salt until well combined.

  2. Heat a large skillet or griddle over medium heat and add a pat of butter.

  3. Dip each slice of bread into the egg mixture, letting it soak for a few seconds on each side (don't oversoak or it will be soggy).

  4. Place the soaked bread on the hot skillet and cook for 2-3 minutes per side, until golden brown and cooked through.

  5. Add more butter to the pan as needed for each batch.

  6. Serve hot with maple syrup and a dusting of powdered sugar if desired.

Tips

  • Day-old bread works better than fresh - it absorbs the custard without getting too soggy
  • For extra flavor, add a pinch of nutmeg or a splash of orange zest to the egg mixture
  • Keep finished pieces warm in a 200Β°F oven while cooking remaining batches
