Gourmet Grilled Cheese with Tomato Soup
Base serves 2 with leftovers — slide to scale the ingredients.
Ingredients:
For the Grilled Cheese:
- Artisan bread slices
- Butter, softened for spreading
- Cheeses (mix and match):
- Aged cheddar
- Gruyere
- Havarti
- Mozzarella
- Optional additions:
- Fig jam
- Sliced pear
- Crispy bacon
- Sautéed green bell pepper (thinly sliced; sauté in a little olive oil with a pinch of salt 3–4 minutes until tender-crisp)
For the Tomato Soup:
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 2 cups vegetable or chicken broth
- 1 tablespoon sugar
- 1/4 cup heavy cream
- Salt and pepper to taste
- Fresh basil leaves, chopped (optional)
Instructions:
For the Grilled Cheese:
- Butter one side of each bread slice.
- On the non-buttered side of half the slices, layer your choice of cheeses.
- If using, spread fig jam on the non-buttered side of the remaining slices.
- Add sliced pear and/or bacon and/or sautéed green bell pepper if desired.
- Close sandwiches with the remaining bread slices, buttered sides facing out.
- Heat a skillet or griddle over medium heat.
- Cook sandwiches until golden brown and crispy on both sides, about 3-4 minutes per side, or until cheese is melted.
- Cut diagonally and serve hot with tomato soup.
For the Tomato Soup:
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Pour in crushed tomatoes and broth, then add sugar.
- Bring to a simmer and cook for 15-20 minutes.
- Use an immersion blender to puree the soup until smooth (or transfer to a blender in batches).
- Stir in heavy cream and season with salt and pepper to taste.
- Garnish with fresh basil if desired.
