Italian Sausage & Veggie Pasta with Sourdough (Serves 3)
Base serves 2 with leftovers — slide to scale the ingredients.
Ingredients:
- 12 oz short pasta (penne, rigatoni)
- 2 Italian sausages, sliced
- 1 plant-based sausage or 1 cup extra mushrooms
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 zucchini, halved and sliced
- 1 cup mushrooms, sliced
- 1 jar pasta sauce
- Red pepper flakes, fennel seeds
- Parmesan cheese, parsley for garnish
- 1 loaf sourdough bread
Instructions:
- Cook pasta in salted water, reserve 1/4 cup pasta water.
- Sauté sausage until browned, set aside. Do the same with plant-based protein.
- Sauté onion, garlic, then add veggies. Cook until softened.
- Stir in pasta sauce, fennel seeds, pepper flakes. Simmer 10 mins.
- Combine sauce with pasta and reserved water. Add meat and veg portions separately.
- Serve with Parmesan, parsley, and sourdough on the side.
