Italian Sausage & Veggie Pasta with Sourdough (Serves 3)

Base serves 2 with leftovers — slide to scale the ingredients.

Ingredients:

  • 12 oz short pasta (penne, rigatoni)
  • 2 Italian sausages, sliced
  • 1 plant-based sausage or 1 cup extra mushrooms
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, halved and sliced
  • 1 cup mushrooms, sliced
  • 1 jar pasta sauce
  • Red pepper flakes, fennel seeds
  • Parmesan cheese, parsley for garnish
  • 1 loaf sourdough bread

Instructions:

  1. Cook pasta in salted water, reserve 1/4 cup pasta water.
  2. Sauté sausage until browned, set aside. Do the same with plant-based protein.
  3. Sauté onion, garlic, then add veggies. Cook until softened.
  4. Stir in pasta sauce, fennel seeds, pepper flakes. Simmer 10 mins.
  5. Combine sauce with pasta and reserved water. Add meat and veg portions separately.
  6. Serve with Parmesan, parsley, and sourdough on the side.
