Pasta Primavera
Base serves 2 with leftovers — slide to scale the ingredients.
Ingredients:
- 12 oz pasta (penne or fettuccine)
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
- Cook pasta according to package instructions.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
- Add bell pepper, zucchini, cherry tomatoes, and broccoli. Sauté until vegetables are tender.
- Toss cooked pasta with vegetables. Season with salt and pepper.
- Garnish with fresh basil before serving.
