Thai Red Coconut Curry with Crispy Tofu (Serves 3–4)

The vault has stir fry, fried rice, and peanut noodles but no curry at all β€” this fills that hole. A red curry paste bloomed in thick coconut cream until the oil splits, loosened into a silky sauce, poured over jasmine rice with tofu that stays genuinely crisp because it goes back in at the very end. Vegetarian as written; chicken or shrimp cooks separately for the meat bowls.

🚨 Buy a vegetarian curry paste. Most Thai red curry pastes β€” Maesri, Mae Ploy, Aroy-D β€” contain shrimp paste. Thai Kitchen red curry paste is vegetarian and widely stocked. Read the label; this is the one ingredient that can quietly break the whole meal.

Ingredients

Crispy Tofu

  • 1 (14–16 oz) block extra-firm tofu, pressed 15 min and cut into ΒΎ" cubes
  • 2 tbsp cornstarch
  • Β½ tsp kosher salt
  • 3 tbsp neutral oil (avocado, canola)

Curry Base

  • 2 (13.5 oz) cans full-fat coconut milk β€” do not shake the cans
  • 3 tbsp Thai red curry paste (see the note above)
  • 1 small yellow onion, sliced into half-moons
  • 1 red bell pepper, sliced ΒΌ" thick
  • 2 medium carrots, sliced thin on a bias
  • 4 oz green beans, trimmed and cut into 2" pieces (broccoli florets also work)
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • Juice of 1 lime, plus zest
  • Kosher salt to taste

To Serve

  • 1Β½ cups jasmine rice, cooked (about 4 cups cooked)
  • Fresh Thai basil or cilantro, torn
  • Lime wedges
  • Crushed roasted peanuts
  • Sliced red chili, chili crisp, or sriracha

Protein Options

  • Vegetarian: the crispy tofu carries it
  • Meat: 1 lb boneless skinless chicken thighs, sliced thin against the grain β€” or ΒΎ lb large shrimp, peeled

Instructions

  1. Rice first. Start the jasmine rice so it's resting and steaming by the time the curry is done.
  2. Crisp the tofu. Toss the pressed cubes with cornstarch and salt until evenly dusted. Heat the neutral oil in a large skillet over medium-high and fry the tofu in a single layer, 2–3 minutes per side, turning to get 3–4 golden faces. Transfer to a plate. Do not put it back in until serving.
  3. (Meat side) In the same skillet, sear the sliced chicken over high heat 4–5 minutes until cooked through β€” or the shrimp 2 minutes per side. Set aside in its own bowl, fully separate. Shrimp especially: it takes almost no time and turns rubbery if you walk away.
  4. Bloom the paste β€” this is the whole recipe. Open the coconut milk cans without shaking and scoop the thick cream off the top of one into the skillet over medium heat. Let it bubble 1–2 minutes until it looks broken and oily, then add the curry paste and fry it 2–3 minutes, stirring, until the fat turns deep red and smells sharp. Beige curry is un-bloomed curry.
  5. Vegetables. Add the onion and carrots; cook 3 minutes. Add the bell pepper, green beans, garlic, and ginger; cook 2 minutes more.
  6. Loosen. Pour in the rest of both cans of coconut milk. Add soy sauce and brown sugar. Bring to a bare simmer β€” not a hard boil, which splits the sauce β€” and cook 8–10 minutes until the carrots are tender-crisp and the sauce coats a spoon.
  7. Finish off the heat. Stir in lime juice and zest. Taste and correct: more lime if it's flat, more sugar if it's harsh, salt if it's dull. It should read hot, sweet, salty, and sour all at once.
  8. Serve. Rice in the bowl, curry ladled over, crispy tofu piled on top so it stays crisp. Chicken or shrimp goes onto the meat bowls only. Finish with torn basil, peanuts, and a lime wedge.

Tips & Variations

  • Toddler portion: pull a small bowl of plain rice, a few plain tofu cubes, and some carrot and green bean before anything spicy happens. Or give her curry thinned with a big splash of the reserved coconut milk β€” it mellows the heat fast and she gets the flavor.
  • Heat control: 3 tbsp of paste is medium. Start at 2 tbsp and add more at step 6 if you want it hotter; you can always push heat up at the table with chili crisp.
  • Press the tofu properly. Wrap it in a towel under a heavy pan for 15 minutes while you prep the vegetables. Wet tofu steams instead of crisping, and no amount of cornstarch saves it.
  • Leftovers: the curry reheats beautifully; the tofu does not. Store them separately and re-crisp the tofu in a dry skillet.
  • Fall version: swap the green beans and bell pepper for cubed butternut squash and sweet potato, simmered 15 minutes.
